Everytime i download something, such as a document, it automatically opens the program set for it (for example, adobe reader or MS 2008). How do i prevent it from opening on a mac every time i download something?

I have all my music organized in a folder on my desktop right now. Can someone please give me a step by step process to transfer my library and data (play counts, stars etc.) to my new Apple Macbook? I’ve googled it but a lot of the instructions I’ve found only apply to Windows->Windows or Apple->Apple transition. Thanks!
