How to reset password on Mini Mac using Leopard OS X Server?

A former co-worker had set a username and password and didn’t leave it with us (he doesn’t remember it anyway). When I boot up the mini mac it asks me to log in. How can I reset this? I have tried putting the OS X disc back in.
